Vegan Banana Bread Muffins
Ingredients
1.5 cups bread flour
1/3 cup brown sugar
1.5 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup melted coconut oil
4 overripe bananas, mashed
1/4 cup almond or coconut milk
1 teaspoon vanilla extract
- Preheat oven to 350 degrees. Grease muffin tins or place muffin liners in tins.
- Mix flour, sugar, baking powder, baking soda, cinnamon, and nutmeg.
- In a separate bowl, mix coconut oil, bananas, milk, and vanilla extract, and stir into dry ingredients.
- Spoon the mixture into muffin tins.
- Bake 15 minutes. Yields 12 standard-sized muffins.
