Mushroom, Spinach, & Gruyere Frittata

Ingredients
2 tablespoons butter
1 small onion, chopped
1 cup mushrooms, chopped
2 cups spinach
1 teaspoon white truffle olive oil
6 eggs
1 cup applewood smoked gruyere, grated
1/4 cup milk
Salt and pepper to taste

  1. Sauté onion and mushrooms in butter until vegetables are browned. Add spinach and olive oil, and stir until spinach is wilted.
  2. In a separate bowl, use a fork to mix the eggs, gruyere, milk, and salt and pepper to taste.
  3. Add the vegetables to the egg mixture, and place in a greased square pan. Bake at 350 for 25-30 minutes.
