Breakfast Dishes


Base Quiche Recipe (with lots of ingredient options!)

Base Ingredients
2 teaspoons butter, olive oil, or truffle olive oil
1/2 cup finely diced onions or scallions
5 eggs
1 cup cheese, grated (cheddar, blue, gruyere, feta, parmesan, and manchego are winners)
1/4 cup milk
1 teaspoon Italian herbs seasoning
Salt and pepper to taste
Dash of hot sauce

Optional Ingredients (choose between 2-4 to add to your base recipe)
1 cup asparagus, finely chopped and sautéed
1 cup zucchini, finely chopped and sautéed
1 cup yellow squash, finely chopped and sautéed
1 cup cherry tomatoes, cut in halves, sautéed, and drained of excess liquird
1 cup bell pepper, finely chopped and sautéed
1 cup broccoli, finely chopped and sautéed
1 cup fresh spinach, chopped and sautéed
1 cup mushrooms, chopped and sautéed
1 cup canned artichoke hearts, drained, chopped and sautéed
1 cup bacon, cooked and chopped
1 cup honey ham, cooked and chopped
1 cup sage breakfast sausage, cooked and chopped

  1. Preheat oven to 350 degrees.
  2. Sauté onion or scallions in butter or oil of choice.
  3. Whisk the eggs, and add the onion or scallions, cheese, milk, and seasonings.
  4. Add between 2-4 of the optional ingredients (note: they should all be pre-cooked, per the instructions above).
  5. Pour the mixture into a pie/quiche crust in a pie plate (use my amazing butter crust homemade recipe here).
  6. Bake in preheated oven for 45-60 minutes or until center is firm. Serve warm.

*Note: not only is this an amazing breakfast dish, but it is a beautiful addition to a High Tea or dinner paired with a side salad or soup.
