Vegan Banana Bread Muffins

Ingredients
1.5 cups bread flour
1/3 cup brown sugar
1.5 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup melted coconut oil
4 overripe bananas, mashed
1/4 cup almond or coconut milk
1 teaspoon vanilla extract

  1. Preheat oven to 350 degrees. Grease muffin tins or place muffin liners in tins.
  2. Mix flour, sugar, baking powder, baking soda, cinnamon, and nutmeg.
  3. In a separate bowl, mix coconut oil, bananas, milk, and vanilla extract, and stir into dry ingredients.
  4. Spoon the mixture into muffin tins.
  5. Bake 15 minutes. Yields 12 standard-sized muffins.
