PB&C Chip Oatmeal Cookies
Ingredients
1/2 cup butter, softened
1 cup sugar
1 cup brown sugar
3 eggs
2 cups peanut (or almond) butter
1/4 teaspoon vanilla extract
2 teaspoons baking soda
1/4 teaspoon salt
4.5 cups oats
1 cup peanut butter chips
1 cup chocolate chips
- Preheat oven to 350 degrees.
- Cream butter and sugars. Add eggs and mix until smooth.
- Blend in peanut (or almond) butter and vanilla.
- Add baking soda and salt, and mix until combined.
- Stir in oats and both types of chips.
- Drop by large spoonsful onto greased cookie sheets.
- Bake for 12-15 minutes or until edges are just brown. Transfer to a rack to cool completely.
