PB&C Chip Oatmeal Cookies

Ingredients
1/2 cup butter, softened
1 cup sugar
1 cup brown sugar
3 eggs
2 cups peanut (or almond) butter
1/4 teaspoon vanilla extract
2 teaspoons baking soda
1/4 teaspoon salt
4.5 cups oats
1 cup peanut butter chips
1 cup chocolate chips

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugars. Add eggs and mix until smooth.
  3. Blend in peanut (or almond) butter and vanilla.
  4. Add baking soda and salt, and mix until combined.
  5. Stir in oats and both types of chips.
  6. Drop by large spoonsful onto greased cookie sheets.
  7. Bake for 12-15 minutes or until edges are just brown. Transfer to a rack to cool completely.
