Thanksgiving Leftovers Turkey & Stuffing “Dumplings”
Ingredients
2 tablespoons olive oil
3 garlic cloves, minced
2 pounds leftover turkey, cut into bite-size chunks
1 cup yellow onion, diced
1 cup sliced carrots
1 cup peas
1 cup corn
6 tablespoons butter
6 tablespoons flour
6 cups chicken, turkey, or vegetable broth
1/2 cup heavy cream
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon dried rosemary
Leftover stuffing, cut into squares and warmed
- Heat the olive oil over medium heat. Add the garlic and sauté until tender. Add the carrots and onion, and sauté until tender.
- Reduce the heat to medium-low and add the butter, stirring until melted. Whisk in the flour until smooth.
- Add the broth, cream, and herbs to the pan and whisk constantly until mixture thickens.
- Fold in the turkey pieces, peas, and corn, and bring mixture to a simmer. Cook for 15 minutes.
- Spoon the mixture into a serving bowl, and place the leftover stuffing squares on top. Serve immediately.
*Notes: you can always substitute whatever vegetables you already have on hand, especially if you had cooked a variety of vegetables as side dishes for your meal. In addition, a nice substitute for the stuffing squares is leftover dinner rolls.
