Thanksgiving Leftovers Turkey & Stuffing “Dumplings”

Ingredients
2 tablespoons olive oil
3 garlic cloves, minced
2 pounds leftover turkey, cut into bite-size chunks
1 cup yellow onion, diced
1 cup sliced carrots
1 cup peas
1 cup corn
6 tablespoons butter
6 tablespoons flour
6 cups chicken, turkey, or vegetable broth
1/2 cup heavy cream
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon dried rosemary
Leftover stuffing, cut into squares and warmed

  1. Heat the olive oil over medium heat. Add the garlic and sauté until tender. Add the carrots and onion, and sauté until tender.
  2. Reduce the heat to medium-low and add the butter, stirring until melted. Whisk in the flour until smooth.
  3. Add the broth, cream, and herbs to the pan and whisk constantly until mixture thickens.
  4. Fold in the turkey pieces, peas, and corn, and bring mixture to a simmer. Cook for 15 minutes.
  5. Spoon the mixture into a serving bowl, and place the leftover stuffing squares on top. Serve immediately.

*Notes: you can always substitute whatever vegetables you already have on hand, especially if you had cooked a variety of vegetables as side dishes for your meal. In addition, a nice substitute for the stuffing squares is leftover dinner rolls.
