Hearty Broccoli Blue Cheese Soup
Ingredients
2 tablespoons olive oil
1 leek or small white onion, finely chopped
2 cloves garlic, finely chopped
1 stick celery, finely chopped
1 medium potato, diced
4 cups vegetable broth
2 tablespoons butter
1 head broccoli, chopped
4 ounces blue cheese
Salt & pepper to taste
- In a large soup pot, heat oil over medium heat. Add leek or onion and garlic; cook and stir until tender.
- Add celery, potato, and butter and cook until tender.
- Add vegetable broth and broccoli, bring to a boil, lower heat, and simmer for 20 minutes.
- Stir in blue cheese and salt & pepper to taste. Whisk with an immersion blender (or transfer to blender of food processor) and blend until smooth.
*Note: this soup pairs well with a freshly-baked dinner roll or hearty slice of sourdough bread.
