Mushroom, Spinach, & Gruyere Frittata
Ingredients
2 tablespoons butter
1 small onion, chopped
1 cup mushrooms, chopped
2 cups spinach
1 teaspoon white truffle olive oil
6 eggs
1 cup applewood smoked gruyere, grated
1/4 cup milk
Salt and pepper to taste
- Sauté onion and mushrooms in butter until vegetables are browned. Add spinach and olive oil, and stir until spinach is wilted.
- In a separate bowl, use a fork to mix the eggs, gruyere, milk, and salt and pepper to taste.
- Add the vegetables to the egg mixture, and place in a greased square pan. Bake at 350 for 25-30 minutes.
